Sweet potatoes are, well, pretty sweet -- and we're not just talking about how they taste. One of these vibrant root vegetables packs more than three times your recommended daily intake of skin- and vision-enhancing vitamin A. To boot, sweet potatoes serve up a healthy dose of fiber, as well as potassium and B vitamins.
But even though baked sweet potatoes make for an easy side dish, they're not the only way to enjoy this nutritional powerhouse. Quick and Easy Microwave Hidden Valley Honey BBQ Original Ranch Sweet Potato Recipe
Serves 4
Prep Time: 15 minutes
Ingredients:
2 strips bacon
1/2 cup yellow onion, thinly sliced
2 large sweet potatoes, washed and dried
2 tablespoons Hidden Valley Honey BBQ Original Ranch
Salt and pepper to taste
Directions:
1. Place a double layer of paper towel on a plate and set aside. Add the bacon to a small saut&eactue; pan cook over medium heat until crispy, about three minutes per side. Remove the bacon from the pan and place on the towel-lined plate to drain. Add the onions to the same pan, without cleaning it first. Over medium heat, stirring often, caramelize the onions, about five minutes. Season to taste with salt and pepper. Then crumble the drained bacon and add it to the onions. Set aside.
2. Use a fork to pierce holes all over the sweet potato, on all sides.
3. Place a double layer of paper towels in the microwave, and put the pierced sweet potato on top.
4. Turn the microwave to high and cook for 2-1/2 minutes. Then turn the sweet potato over and cook for another 2-1/2 minutes.
5. Slice the sweet potato in half, lengthwise, and then gently scoop the flesh into a small mixing bowl, keeping the skin as intact as possible. Use a fork to roughly mash the sweet potatoes.
6. Add the Hidden Valley® Honey BBQ Original Ranch® and about half of the onion-bacon mixture to the sweet potatoes and season to taste if necessary with salt and pepper.
7. Gently fill the empty sweet potato skins and then top each one with a bit of the remaining onion-bacon mixture.
Easy Grilled Sweet Potato French Fries Recipe
Serves 4
Prep Time: 5 minutes
Cook Time: 6 minutes
Ingredients:
2 large sweet potatoes, peeled
3 tablespoons olive oil
1/4 teaspoon cinnamon
1/4 teaspoon salt
Pinch cayenne pepper
Directions:
1. Preheat a stove-top grill or outdoor barbecue.
2. Cut the sweet potatoes in half horizontally, and then into approximately 1/4-inch slices. Then cut those slices into fries, 1/4 to 1/2-inch wide.
3. Add them to a mixing bowl and gently toss with the olive, cinnamon, salt and cayenne.
4. Place the fries on the grill when it's very hot, with ample space between them. Grill each side until they're nicely marked and tender, about three minutes per side.
Cheesy Hasselback Roasted Sweet Potato Recipe
Serves 4 Prep Time: 5 minutes
Cook Time: 40 minutes
Ingredients:
4 small sweet potatoes, washed and dried
2 tablespoons olive oil
Salt and pepper, to taste
1 cup Gruyère cheese, thinly sliced
Directions:
1. Preheat the oven to 425 degrees F. Make 1/8 to 1/4-inch slits horizontally along the entire length of each potato, slicing almost to the bottom, but being careful not to go all the way through.
2. Rub about half of the oil on each sweet potato. Sprinkle both with salt and pepper and place them on heavy-duty foil in the preheated 425 degree F oven.
3. Roast for 20 minutes, and run a spoon gently across the slices to separate them a bit. Continue to roast until the potatoes are tender and the outside appears slightly crispy, about 20 more minutes.
4. Divide the cheese slices between the two potatoes, adding one inside each slit. The slices should be slightly larger than the slits. Return the cheese filled sweet potatoes to the oven, just to melt the cheese, about two minutes.
