Nutritionist of Carillon Miami Wellness Resort Staci Shacter MS RD LDN says that the differences between bone broth and regular chicken broth are cooking time and acid. With bone broth, a bit of apple cider vinegar (an acid) is typically added with the water and bones to help leach out more of the nutrients from the bones. Then, the bone broth is cooked low and slow to extract as much nutrients from the bones. Shacter says that some recipes call for simmering the bones for 24 hours.
