Coconut Cake in a Mug Coconut has been having a major moment for a while now (coconut oil, coconut water, coconut milk), so you might already have some of these ingredients. This mug cake might not be low-fat, but it's so tiny, you can sit back and enjoy.
For the topping:
1/2 cup heavy whipping cream
2 tablespoons granulated sugar
1 tablespoon sweetened coconut flakes
Directions:
Combine all ingredients (except coconut flakes) in a large microwave-safe mug. Mix with a small whisk or fork until smooth. Stir in coconut flakes.
Cook in microwave for a minute to a minute and 15 seconds. Let cake cool for a few minutes.
To make the topping, add the cream and sugar to the mixing bowl of a standard (or handheld) mixer. Mix on high speed until peaks form. Top the cake with the whipped cream, and sprinkle coconut flakes on top.
