Avocado Recipes: Easy Chicken and Avocado Burritos
Consider dinner planned: This satisfying meal can be thrown together quickly -- for far fewer calories than an overstuffed burrito at your local Mexican joint.
Directions:
Mix the shredded chicken, cheese, cilantro and diced avocados. Lay a tortilla flat on a plate and top it with a quarter of the mixture. Roll up the tortilla. Repeat the process for all four tortillas. Pour a tablespoon of oil into a heated pan or griddle. Place all four tortillas on the pan and cook for two minutes on medium-high heat. Flip the burrito and cook it on the other side until it's golden in color. Serve warm.
It doesn't matter if you call it avocado salsa or superchunky guacamole. This simple chip complement is delicious -- and a breeze to put together -- either way.
Ingredients:
2 large avocados, diced
2 tablespoons lime juice (one lime)
1 jalape˜o pepper, finely diced
1 plum tomato, seeded and finely diced
1/4 cup red onion, finely diced
2 tablespoons cilantro, chopped
Directions:
Mix all the ingredients together. And season with salt.
This might be a bit of a healthy avocado recipe stretch, but this appetizer features the union of perhaps the internet's two favorite foods. In other words, there's no way it can be bad, right?
Ingredients:
4 to 6 strips of bacon
1 large avocado
1/3 cup brown sugar
1/2 to 1 teaspoon chili powder
Directions:
Preheat the oven to 425 degrees. In a small bowl, mix together the brown sugar and chili powder and set aside. Line a baking sheet with foil. Cut open the avocado and remove the pit. Slice about 3/4-inch slices lengthwise, and then cut through the middle to cut all of the slices in half so that you have short, thick chunks of avocado.
Cut each slice of bacon in 3 to 5 pieces, and wrap each piece around the avocado. Roll in the brown sugar mixture and place on the baking sheet. Bake at 425 degrees for 10 to 15 minutes. Remove from the oven to a platter and stick a toothpick in each for serving.
Step aside, guacamole -- there's a new avocado dip in town. This healthy avocado recipe balances the spiciness of jalapeño with cool, buttery avocado and cream cheese.
Ingredients:
8 ounces cream cheese
1 avocado
1/2 cup jalapeño, sliced (you can use jarred)
1/2 cup cilantro
1 tablespoon milk
1 teaspoon garlic powder
1/2 teaspoon salt
Directions:
Blend all ingredients in a blender. Add more salt, garlic or jalapeños to taste. Use the milk or jalapeño juice to help blend. Chill before eating. Serve with chips or crackers.
