Your eyes do not deceive you -- this decadent s'mores mug cake is real, and perfectly portioned for a party of one. You don't even need a campfire to execute this yummy chocolate microwave dessert.
Ingredients:
2-3 tablespoons graham cracker crumbs
3 1/2 tablespoons unsalted butter, melted
2 tablespoons granulated sugar
1 large egg
1/2 teaspoon vanilla extract
1/4 cup whole wheat pastry flour
2 tablespoons unsweetened cocoa powder
1/8 teaspoon baking powder
1 1/2 ounces milk chocolate chips
Marshmallow fluff or real marshmallows
Dash of salt
Directions:
Combine 3 tablespoons of butter and 1 ounce of chocolate chips in a small bowl -- melt in the microwave for 20-30 seconds, and aside. In your mug, stir the remaining melted butter with your graham cracker crumbs. Press the graham crumbs into the bottom of the mug to create a crust.
In a second bowl, whisk the sugar, egg and vanilla until smooth. Add flour, baking powder, salt and cocoa, and stir until a thick batter forms. Then slowly add in your melted butter-and-chocolate mixture, and throw in the remaining chocolate chips.
Pour half of the mixture into your mug on top of the graham cracker crust; then, add a scoop of marshmallow fluff or a few marshmallows on top. Layer the remaining batter on top of that. Cook in the microwave for 1 minute, 20 seconds to 2 minutes.
Take your mug out of the microwave and top with additional marshmallows, then pop it back in for another 5-10 seconds to melt them slightly. Garnish with graham cracker crumbs.
