There's no need to even bake the crust with these raw white chocolate and berry mini cheesecakes. The base is a combination of walnuts, medjool dates and, for the superfood quotient, goji berries. The "crust" ingredients are blitzed, then the fruity filling is poured right over top. Feel free to use whatever berries you have on hand — it'll always be delicious.
